  • 1 large onion, finely chopped
  • 2 ripe tomatoes, diced (or 1 can of diced tomatoes)
  • 1 medium bell pepper, diced (red or yellow)
  • 1 teaspoon black pepper
  • ? cup unrefined palm oil
  • Salt to taste

Instructions

  1. Thoroughly wash the spinach and chop it coarsely. Finely chop the onion, dice the tomatoes, and slice the bell pepper.
  2. Heat palm oil in a large pot over medium heat until shimmering.
  3. Saut? the chopped onions for about five minutes until translucent and fragrant.
  4. Add diced tomatoes and bell peppers; stir for a few minutes until softened.
  5. Season with black pepper and salt; let simmer for ten minutes.
  6. Stir in the chopped spinach until wilted (about three minutes). Serve hot.
