Ingredients

  • 2 pounds Yukon Gold potatoes, thinly sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, grated
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375?F (190?C) and coat a baking dish with nonstick cooking spray or butter.
  2. Saut? minced garlic in butter over medium heat until fragrant, then add spinach and cook until wilted.
  3. Layer half of the sliced potatoes at the bottom of the baking dish, followed by half of the saut?ed spinach mixture and half of the cheese. Repeat layers.
  4. Pour heavy cream over the top layer and season generously with salt and pepper.
  5. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 20 minutes or until golden brown on top.
