Instructions
- Chop the fresh shrimp into half-inch cubes and place them in a glass bowl. Cover completely with lime juice and let marinate in the fridge for 15-20 minutes until opaque.
- While the shrimp marinates, dice the avocados, red onion, and jalape?o pepper. Combine these with chopped cilantro in a separate bowl.
- Once the shrimp is ready, drain some lime juice (but not all) and gently mix it with the avocado mixture. Add salt to taste.
- Chill the ceviche in the fridge for an additional ten minutes before serving.
