  • 12 oz smoked sausage (kielbasa or andouille)
  • 1 lb Yukon gold potatoes, diced
  • 1 cup bell peppers, sliced (mixed red and green)
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C).
  2. Dice the smoked sausage into bite-sized pieces. Chop the potatoes into cubes and slice the bell peppers and onion.
  3. In a large bowl, combine the sausage, potatoes, bell peppers, onions, olive oil, paprika, garlic powder, salt, and pepper. Toss until everything is well-coated.
  4. Spread the mixture evenly on a baking sheet and bake for 30-35 minutes until golden brown and crispy on the outside.
  5. Stir halfway through cooking for even browning. Serve hot with fresh herbs if desired.
