- 1 lb Brussels sprouts
- 2 tbsp extra virgin olive oil

Instructions
- Preheat the oven to 400?F (200?C) and line a baking sheet with parchment paper.
- Trim the ends of the Brussels sprouts and remove any yellow leaves; rinse under cold water.
- Boil in salted water for about 5 minutes until slightly tender but not mushy. Drain thoroughly.
- Place on the baking sheet and smash each sprout to about half an inch thick using a potato masher.
- Drizzle with olive oil, sprinkle with garlic, salt, and pepper, then toss to coat evenly.
- Roast for 20-25 minutes until golden brown and crispy, flipping halfway through cooking.
- Drizzle with balsamic vinegar while warm and serve immediately.
