  • 3–4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup long-grain rice
  • 1 can (10.5 oz) low-fat cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350?F (175?C). Spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt, pepper, paprika, and thyme.
  3. In a large bowl, combine the rice, cream of chicken soup, and chicken broth; mix well.
  4. Layer half of the rice mixture in the baking dish. Place the seasoned chicken on top and cover with the remaining rice mixture.
  5. Cover with foil and bake for 45 minutes until the chicken reaches an internal temperature of 165?F (75?C).
  6. Uncover during the last 10 minutes to brown the top. Let sit for a few minutes before serving.
