Description

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 cup brown sugar (for the sauce)
  • 1/2 tsp sea salt (for the sauce)

Instructions

  1. Preheat the oven to 400?F (200?C). In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour until a dough forms.
  2. Let the dough cool slightly, then add eggs one at a time, mixing until smooth.
  3. Pipe small mounds of dough onto a parchment-lined baking sheet. Bake for 20-25 minutes until golden brown and puffed.
  4. While cooling, whip cream with sugar until soft peaks form.
  5. For the caramel sauce, combine brown sugar and water in a saucepan over medium heat until dissolved. Simmer until amber-colored; stir in salt and heavy cream.
  6. Assemble by cutting profiteroles in half, filling with whipped cream, and drizzling with warm caramel.
