  • 2 medium zucchinis (about 300g)
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425?F (220?C).
  2. Wash the zucchinis thoroughly and slice them into even rounds, about half an inch thick.
  3. In a large bowl, drizzle the olive oil over the sliced zucchini. Add salt, pepper, and garlic powder; toss until all pieces are evenly coated.
  4. Spread the seasoned zucchini on a baking sheet lined with parchment paper in a single layer.
  5. Roast for 20-25 minutes or until golden brown and tender, shaking the pan halfway through for even cooking.
  6. If desired, sprinkle Parmesan cheese on top immediately after removing from the oven. Serve hot.
