Instructions
- Preheat the oven to 400?F (200?C). Line a baking sheet with parchment paper.
- Wash and trim the beets, leaving about an inch of stem attached. Drizzle with 1 tablespoon olive oil, season with salt and pepper, wrap in foil, and place on the baking sheet.
- Wrap the garlic cloves in foil with a drizzle of olive oil and add them to the baking sheet. Roast both beets and garlic for about 45 minutes until tender.
- In a small bowl, combine roasted garlic (after cooling), balsamic vinegar, Dijon mustard, and remaining olive oil; whisk until smooth.
- Once beets are done, let them cool slightly before peeling and slicing. Serve drizzled with vinaigrette.
