  • 2 cups fresh rhubarb, chopped
  • 3 large eggs
  • ? cup granulated sugar
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 4 tbsp melted butter

Instructions

  1. Preheat your oven to 350?F (175?C) and grease a pie plate with melted butter.
  2. Toss the chopped rhubarb in 1 tablespoon of sugar; set aside.
  3. In a bowl, whisk together the eggs and remaining sugar until frothy. Gradually mix in the milk, melted butter, vanilla extract, and flour until smooth.
  4. Pour half of the batter into the prepared dish, then evenly distribute the rhubarb on top. Pour the remaining batter over the rhubarb.
  5. Bake for 40-45 minutes until puffed and golden brown; a toothpick should come out clean.
  6. Let cool slightly before slicing; serve warm or at room temperature.
