  • 1 lb fresh green beans, trimmed
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt

  • 1 tbsp fresh rosemary or thyme (or 1 tsp dried)

Instructions

  1. Preheat oven to 425?F (220?C).
  2. Wash and dice the potatoes into bite-sized pieces. Trim the ends of the green beans and cut them in half.
  3. In a large bowl, toss potatoes with olive oil, minced garlic, salt, pepper, and herbs until well coated.
  4. Spread seasoned potatoes on a baking sheet in a single layer; roast for 20 minutes.
  5. Add green beans to the baking sheet; gently mix and return to the oven for an additional 15?20 minutes until both vegetables are golden brown and tender.
