- 1 cup water

- 1 cup shredded queso fresco or Monterey Jack cheese

Instructions
- Boil the peeled potatoes until tender, then mash until smooth and let cool.
- In a large bowl, mix masa harina, water, and salt to form a smooth dough. Knead gently for about 5 minutes.
- Take a golf ball-sized portion of dough, flatten it into a disc, fill with mashed potatoes mixed with cheese, fold edges over, and seal well.
- Heat a non-stick skillet over medium heat with a little oil. Cook each pupusa until golden brown on both sides (about 3-4 minutes per side).
- Serve warm with curtido or salsa.
