- 2 cups fresh peaches, sliced
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 2 large eggs
- 1 tsp baking powder
Instructions
- Preheat your oven to 350?F (175?C) and grease an 8×8-inch baking pan or line with parchment paper.
- In a mixing bowl, combine flour, sugar, and baking powder. Cut in cold butter until crumbly. Press into the bottom of the prepared pan.
- Bake crust for about 10 minutes until lightly golden.
- While the crust bakes, whisk together heavy cream, sugar, eggs, and vanilla extract in another bowl. Gently fold in half of the sliced peaches.
- Pour cream filling over the pre-baked crust and top with remaining peach slices.
- Bake for an additional 30-35 minutes until set and golden on top. Allow to cool completely before slicing.
