  • 1 cup mixed vegetables (carrots, peas, potatoes, bell peppers)
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp turmeric
  • ? cup chopped fresh coriander
  • Water (as needed for kneading)
  • Salt (to taste)

Instructions

  1. 1. Prepare the Dough: In a large bowl, combine whole wheat flour and salt. Gradually add water while kneading until smooth. Cover with a damp cloth and let it rest for 20-30 minutes.
  2. 2. Prepare the Filling: Steam or boil mixed vegetables until tender. Drain excess water and mash slightly. Mix in chopped coriander and spices.
  3. 3. Divide and Roll: Divide dough into golf ball-sized portions. Roll out each ball into a small circle.
  4. 4. Stuff: Place two tablespoons of the vegetable filling in the center of the rolled dough circle; fold edges to seal tightly.
  5. 5. Roll Again: Flatten the stuffed ball gently and roll out into a larger circle without letting the filling escape.
  6. 6. Cook: Heat a tawa over medium heat and cook each paratha until golden brown on both sides, brushing with ghee or oil if desired.
