- 1 cup unsalted butter, melted
- 1 cup granulated sugar, divided
- 1 cup all-purpose flour, plus 2 tablespoons
- 3 large eggs
- 3/4 cup Meyer lemon juice (about 3–4 lemons)
- Zest of 1 Meyer lemon
- Powdered sugar for dusting
Instructions
- Preheat oven to 350?F (175?C).
- In a mixing bowl, combine melted butter, 1/2 cup granulated sugar, and 1 cup flour. Mix well and press into the bottom of a greased baking dish. Bake for 15 minutes until lightly golden.
- While the crust bakes, whisk together eggs, remaining sugar (1/2 cup), Meyer lemon juice, zest, and 2 tablespoons flour until smooth.
- Once the crust has cooled slightly, pour the lemon filling over it and bake for an additional 20-25 minutes until set but still jiggly in the center.
- Allow to cool completely before slicing into squares and dusting with powdered sugar.
