  • 2 pounds russet or Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • ? cup whole milk
  • 1 cup shredded cheddar cheese
  • ? cup crispy bacon bits (optional)
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into equal-sized chunks. Boil in salted water until fork-tender (15-20 minutes). Drain and return to pot.
  2. Add butter and milk; mash until smooth. Season with salt and pepper.
  3. Fold in half of the cheddar cheese and most of the bacon bits.
  4. Preheat oven to 375?F (190?C). Grease a muffin tin.
  5. Spoon mashed potato mixture into muffin cups, pressing down slightly. Top with remaining cheese and bacon.
  6. Bake for 20-25 minutes, until edges are golden brown.
