  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 2 large yellow onions, sliced thick
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tsp fresh thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 325?F (165?C). Season the chuck roast generously with salt and pepper.
  2. In a Dutch oven over medium-high heat, add olive oil and sear the roast on all sides until golden brown.
  3. Remove the roast and saut? onions and garlic in the same pot until translucent.
  4. Return the roast to the pot, add carrots, beef broth, and red wine until submerged halfway.
  5. Sprinkle fresh thyme over the top, cover tightly with a lid.
  6. Bake in preheated oven for about 3 hours or until fork-tender. Let rest for 10 minutes before slicing.
