  • 3–4 boneless, skinless chicken breasts (about 1 lb)
  • 2 ripe mangoes, peeled and cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1-inch piece fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. Dice the chicken into bite-sized pieces. Prepare garlic, ginger, and mango.
  2. In a skillet over medium heat, add oil and saut? garlic and ginger until fragrant (about 1 minute).
  3. Add the chicken to the skillet, season with salt, pepper, and curry powder; cook until browned (about 5 minutes).
  4. Stir in coconut milk and let simmer for about 10 minutes.
  5. Fold in mango cubes and lime juice; simmer for another 5 minutes until heated through.
  6. Serve hot over rice or with naan, garnished with fresh cilantro if desired.
