  • 2 ripe mangoes (peeled and chopped)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs (room temperature)
  • 1 cup whole milk

Instructions

  1. Preheat the oven to 350?F (175?C) and grease two 9-inch round baking pans.
  2. Blend the chopped mangoes into a smooth puree; set aside half for frosting.
  3. In a bowl, whisk together flour, baking powder, and sugar.
  4. Cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Then mix in milk and half of the mango puree.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow to cool before frosting with remaining mango puree mixed with whipped cream.
