  • 1 cup kimchi, chopped
  • 4 oz bacon or pancetta, diced
  • 2 large eggs

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, cook diced bacon or pancetta until crispy. Remove excess fat but leave some for flavor.
  3. Add minced garlic and chopped kimchi to the skillet; saut? for 3-4 minutes until fragrant.
  4. In a bowl, whisk together eggs, grated Pecorino Romano cheese, and black pepper.
