Instructions

  1. Wash and pit the cherries. Mash them in a large pot until mostly broken down.
  2. Stir in sugar and lemon juice, allowing the mixture to sit for a few minutes.
  3. Heat over medium heat until simmering, stirring occasionally.
  4. Add pectin and amaretto; bring back to a rolling boil for one minute while stirring constantly.
  5. Ladle hot jam into sterilized jars and seal tightly.
