  • 4 ripe apricots, pitted and sliced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350?F (175?C) and grease an 8-inch square baking dish.
  2. In a bowl, toss sliced apricots with 1/4 cup brown sugar and cinnamon until coated.
  3. In another bowl, mix flour, oats, remaining brown sugar, and softened butter until the mixture resembles coarse crumbs.
  4. Press half of the crumble mixture into the bottom of the greased baking dish. Layer the apricot mixture on top and sprinkle with the remaining crumble.
  5. Bake for 30-35 minutes or until golden brown and bubbly.
  6. Allow to cool for 15 minutes before cutting into squares; serve warm or at room temperature.
