  • 1 cup pineapple tidbits (drained if canned)
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 400?F (200?C) and spray a baking sheet with nonstick cooking spray.
  2. In a large bowl, mix the ground beef, pineapple tidbits, breadcrumbs, and egg until well combined.
  3. Shape the mixture into golf ball-sized meatballs (about 2 tbsp each) and place them on the baking sheet.
  4. In a separate bowl, whisk together soy sauce and brown sugar until smooth.
  5. Bake meatballs for 20 minutes or until they reach an internal temperature of 160?F (70?C).
  6. Drizzle meatballs with the sauce mixture and bake for an additional 5 minutes before serving warm.
