- 1 cup bulgur wheat
- 2 cups boiling water
- 1 cup fresh broccoli florets
- 200g halloumi cheese
- 1 cup ripe tomatoes, diced
- 1/2 cup fresh parsley, chopped
- 3 tbsp olive oil
- Juice of 1 lemon (about 2 tbsp)
- Salt and pepper to taste
Instructions
- Rinse bulgur wheat under cold water and combine it with boiling water in a bowl. Cover and let sit for 20 minutes until fluffy.
- Preheat oven to 400?F (200?C). Toss broccoli florets in olive oil, salt, and pepper. Roast on a baking sheet for about 15 minutes until tender.
- Slice halloumi into thick pieces. Heat a skillet over medium heat and grill halloumi for 2-3 minutes per side until golden brown.
- Finely chop parsley and dice tomatoes. Fluff bulgur with a fork and mix in parsley, tomatoes, lemon juice, salt, and pepper.
- In a large bowl, combine roasted broccoli with the bulgur mixture. Drizzle with olive oil and toss gently.
- Serve warm or chilled, topped with crispy halloumi.
