Instructions
- Preheat your oven to 350?F (175?C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
- In another bowl, cream the butter and brown sugar until fluffy. Add the egg and vanilla; mix until combined.
- Gradually add the dry ingredients into the wet mixture and fold in the oats.
- Scoop tablespoon-sized amounts onto prepared sheets about two inches apart. Bake for about 10 minutes until golden but soft in the center.
- Let cool completely before preparing the filling by whipping together cream cheese and powdered sugar with vanilla.
- Spread filling on half of the cookies and sandwich with another cookie half.
