- 2 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 3 cloves garlic, minced
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp sesame oil
- 2 green onions, chopped (for garnish)
Instructions
- Preheat the oven to 400?F (200?C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, whisk together ginger, soy sauce, honey, garlic, lime juice, and sesame oil until smooth.
- Place cod fillets in a shallow dish or resealable bag and pour the marinade over them. Marinate for at least 20 minutes.
- Transfer marinated cod to the prepared baking dish and pour any remaining marinade on top. Bake for 15-20 minutes until the fish flakes easily with a fork.
