- 2 cups low-sodium beef broth

- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme

Instructions
- In a large skillet, sear the beef chuck roast on all sides over medium-high heat (about 4-5 minutes per side) until browned.
- While the beef is searing, chop the onion and carrots.
- Place the seared beef in a slow cooker and add the chopped vegetables, minced garlic, Worcestershire sauce, thyme, and enough beef broth to cover half of the meat.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Once cooked, remove the beef and thicken the remaining sauce with a cornstarch slurry (mix cornstarch with water).
- Serve sliced or shredded beef over mashed potatoes or egg noodles, drizzled with gravy.
