Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tbsp cold water
  • 4 ripe apricots, halved and pitted
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 375?F (190?C). In a bowl, mix flour and sugar. Add cold butter and blend until crumbly.
  2. Stir in egg yolk and add cold water until dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Slice apricots and toss with sugar, cornstarch, and lemon juice.
  4. Roll out chilled dough to fit your tart pan, trim edges, and place in the pan.
  5. Arrange apricot halves over the crust; sprinkle with additional sugar if desired.
  6. Bake for 30-35 minutes until golden brown. Serve warm or at room temperature.
