- 1 lb large raw shrimp, peeled and deveined
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped

- 3 cloves garlic, minced

- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Cook the orzo according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper, then saut? for 2-3 minutes per side until pink and opaque. Remove from skillet.
- In the same skillet, add more olive oil if needed, then saut? minced garlic until fragrant (about 30 seconds). Stir in sun-dried tomatoes, followed by heavy cream, Italian seasoning, salt, and pepper. Simmer gently.
- Add cooked orzo back to the skillet with spinach and shrimp. Toss to combine and simmer for another minute until heated through.
