  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 inch fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your ingredients by peeling and deveining the shrimp, mincing garlic, grating ginger, and chopping bell peppers.
  2. In a large skillet over medium heat, add 2 tbsp oil (coconut oil preferred). Once hot, saut? minced garlic and grated ginger until fragrant (about 1 minute).
  3. Add chopped bell peppers and cook until softened (about 3 minutes).
  4. Stir in the shrimp with salt and pepper; cook until pink and opaque (about 4 minutes).
  5. Pour in coconut milk, sprinkle curry powder, and stir well. Simmer gently for about 5 minutes.
  6. Before serving, squeeze fresh lime juice over the top and garnish with cilantro.
