- 1/2 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter (cold, cubed)
- 1 large egg yolk
- 3/4 cup heavy cream (divided)
- 5 oz dark chocolate (chopped)
- 1/2 cup brown sugar
- 1/4 tsp sea salt (plus extra for topping)
Instructions
- Preheat oven to 350?F (175?C). In a bowl, mix flour, cocoa powder, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and mix until dough forms. Press evenly into tart pans.
- Bake the tart shells for about 15 minutes until firm. Let cool completely.
- Heat 1/2 cup heavy cream until simmering; remove from heat and add chopped dark chocolate, stirring until smooth.
- In a saucepan, melt brown sugar with butter over medium heat until bubbling. Slowly add remaining heavy cream while stirring continuously for about five minutes until thickened.
- Pour ganache into cooled tart shells first, then drizzle warmed salted caramel on top. Sprinkle with sea salt.
- Chill in the fridge for at least one hour before serving.
