- 8 oz flat rice noodles

- 1 cup bean sprouts
- 1/4 cup low-sodium soy sauce
- 2 tbsp tamarind paste
- 2 tbsp brown sugar
- Juice of 1 lime

- Soak rice noodles in warm water for 20-30 minutes until softened. Drain and set aside.
- In a bowl, whisk together soy sauce, tamarind paste, brown sugar, and lime juice.
- Heat oil in a skillet over medium-high heat. Cook diced chicken until golden brown (5-7 minutes). Remove from skillet.
- Add minced garlic to the same skillet; stir-fry for about 30 seconds until fragrant. Add soaked noodles.
- Pour the sauce over the noodles with cooked chicken; toss until well combined. Stir in bean sprouts.
- Push ingredients to one side of the skillet and scramble eggs in the empty space until cooked through. Fold into noodle mixture.
