  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) whole peeled tomatoes
  • 2 oz high-quality dark chocolate
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. 1. Prepare your ingredients: chop the onion and mince the garlic.
  2. 2. In a large skillet over medium heat, add olive oil. Sauté the onion and garlic until fragrant and golden brown (about 5 minutes).
  3. 3. Add chicken thighs to the skillet and brown each side for about 4-5 minutes; then remove them from the skillet.
