- 4 boneless, skinless chicken breasts (about 1 lb/450g)
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 cup flour
- 1 tablespoon curry powder
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 cups low-sodium chicken broth
- ? cup low-sodium soy sauce
- 1 cup coconut milk
- Salt and pepper to taste
- Oil for frying
Instructions
- Flatten chicken breasts to about half an inch thick and season with salt and pepper.
- Set up three plates: one with flour, one with beaten eggs, and one with panko mixed with a pinch of salt. Coat each piece of chicken in flour, dip in egg, then coat with panko.
- Heat oil in a skillet over medium-high heat. Fry chicken for about 4 minutes per side until golden brown. Drain on paper towels.
