- 4 large Portobello mushrooms
- 1 cup fresh mozzarella cheese (sliced)
- 1 cup cherry tomatoes (diced)
- ? cup fresh basil leaves (chopped)
- 2 tbsp balsamic glaze
- 2 tbsp olive oil
- 3 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400?F (200?C) and lightly spray a baking dish with nonstick cooking spray.
- Remove the stems from the Portobello mushrooms and scrape out the gills. Rinse under cold water and pat dry.
- In a mixing bowl, combine diced cherry tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper; mix well.
- Place the mushrooms in the baking dish, gill side up. Generously fill each mushroom with the tomato mixture and top with slices of mozzarella.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Drizzle balsamic glaze over the baked mushrooms and serve warm.
