  • 1 cup granulated sugar (plus extra for coating)
  • 1 cup water
  • 1 tablespoon pearl sugar (optional)

Instructions

  1. Peel and slice the ginger into quarter-inch pieces.
  2. In a saucepan, boil the sliced ginger in water for 15 minutes to mellow its intensity.
  3. Drain the water, return the ginger to the pan, and add equal parts sugar and water (1 cup each). Stir well to combine.
  4. Simmer this mixture on low heat for about 1 hour until the ginger becomes transparent and tender.
  5. Use a slotted spoon to remove the ginger from syrup and place it on parchment paper. While still sticky, toss in granulated sugar or pearl sugar if desired.
  6. Let the candied ginger dry at room temperature for approximately 4 hours before storing in an airtight container.
