  • 2 medium fresh zucchini (sliced into half-moons)
  • 1 cup sweet corn (fresh or frozen)
  • 1 medium red bell pepper (finely chopped)
  • 1 medium onion (finely diced)
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • ? cup fresh cilantro (chopped)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables: slice zucchini, chop bell pepper and onion, and mince garlic.
  2. Heat olive oil in a large skillet over medium heat.
  3. Saut? onions and bell peppers until translucent, about 5 minutes.
  4. Add minced garlic and zucchini; cook for an additional 5 minutes until zucchini is tender but firm.
  5. Stir in sweet corn, season with salt and pepper, and cook for another 3 minutes.
  6. Remove from heat, add cilantro and lime juice, then serve warm.
