  • 4 medium-sized fresh beets (about 1 lb)
  • 4 oz creamy goat cheese
  • 4 cups mixed greens (arugula and spinach)
  • ? cup walnuts, toasted and roughly chopped
  • ? cup balsamic vinaigrette

Instructions

  1. Preheat oven to 400?F (200?C). Wrap each beet in aluminum foil and roast for 45-60 minutes until tender.
  2. Let beets cool slightly, then peel the skin off using your fingers or a paper towel.
  3. Slice the peeled beets into wedges or rounds.
  4. In a large bowl, combine mixed greens with half of the walnuts.
  5. Layer sliced beets over the greens and sprinkle crumbled goat cheese on top. Add remaining walnuts.
  6. Drizzle balsamic vinaigrette over the salad just before serving.
