- 2 lbs Yukon Gold potatoes, thinly sliced
- 8 oz thick-cut bacon, diced
- 2 cups heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruy?re cheese, shredded
- 1 cup Parmesan cheese, freshly grated
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375?F (190?C) and lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook the diced bacon until crispy. Remove and drain on paper towels.
- In the same skillet, saut? minced garlic in the leftover bacon grease for about 1 minute. Add heavy cream and season with salt and pepper; simmer until slightly thickened.
- Layer half of the sliced potatoes in the baking dish. Sprinkle half of each cheese and half of the bacon on top. Repeat with remaining ingredients.
- Pour the cream mixture evenly over the layered ingredients. Cover with foil and bake for about 40 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
- Let cool for 10 minutes before serving.
