- 2 medium eggplants
- 1 lb lean ground beef or lamb
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) whole peeled tomatoes
- ? cup toasted pine nuts
- ? cup creamy peanut butter
- 2 cups whole milk
- ? cup all-purpose flour
- ? tsp nutmeg
- Salt to taste
Instructions
- Preheat the oven to 375?F (190?C).
- Slice the eggplants into rounds, sprinkle with salt, and let sit for 30 minutes to draw out moisture.
- In a skillet, saut? onion and garlic until fragrant. Add ground meat and cook until browned.
- Stir in crushed canned tomatoes and pine nuts; simmer for 10 minutes.
- In another saucepan, melt butter and whisk in flour until golden. Gradually stir in milk until thickened; mix in peanut butter and nutmeg.
- Layer roasted eggplant at the bottom of a baking dish, followed by the meat mixture and b?chamel sauce. Repeat layers, finishing with b?chamel on top.
- Bake for approximately 45 minutes or until golden brown.
