- 1 cup dry red kidney beans
- 8 oz smoked sausage (linguica or chorizo), sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced

- 14 oz can diced tomatoes
- 4 cups low-sodium chicken broth
- 2 bay leaves
- 1 tbsp paprika
Instructions
- Rinse and soak the kidney beans overnight in plenty of water.
- In a large pot over medium heat, saut? onions in olive oil until translucent. Add garlic, carrots, and celery; cook until fragrant.

- Stir in soaked beans, diced tomatoes, chicken broth, bay leaves, and paprika. Bring to a boil.
