  • 1 cup quinoa
  • 4 ripe nectarines
  • 2 tbsp olive oil
  • 1 tbsp honey (or maple syrup for vegan)
  • 1/4 cup fresh mint, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. Rinse quinoa under cold water, combine with 2 cups of water in a pot, bring to a boil, then reduce heat and cover for about 15 minutes until water is absorbed.
  3. Slice nectarines in half, remove pits, and toss them in a bowl with olive oil, honey, salt, and pepper. Place cut-side down on the baking sheet and roast for about 20 minutes until caramelized.
  4. In a large bowl, mix cooked quinoa with roasted nectarines, chopped mint, and feta cheese if using.
  5. In a small bowl, whisk together lemon juice, salt, and pepper; drizzle over the quinoa mixture before serving.
