  • 4 cod fillets (6 ounces each)
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey (or maple syrup)
  • 2 garlic cloves, minced
  • 1 teaspoon sesame oil

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, ginger, garlic, and sesame oil to create the marinade.
  2. Place the cod fillets in a shallow dish and pour half of the marinade over them. Marinate for 15-30 minutes.
  3. Preheat oven to 400?F (200?C) and line a baking sheet with parchment paper.
  4. Remove cod from marinade (discard leftover marinade) and place on the baking sheet. Bake for 12-15 minutes until flaky.
  5. Brush reserved marinade over fillets during the last few minutes of baking for added flavor.
