Ingredients

- 2 tbsp granulated sugar

Instructions
- Separate egg whites and yolks into two bowls. Whisk yolks with sugar until creamy, then mix in milk and vanilla.
- In a separate bowl, sift flour and baking powder together. Fold this mixture into the yolk mixture until just combined.
- Beat egg whites until stiff peaks form, then gently fold them into the yolk mixture in thirds.
- Heat a nonstick skillet over low heat and lightly grease it. Pour a third of the batter into the pan, cover with a lid, and cook for about 4 minutes until bubbles form on top.
- Carefully flip with two spatulas and cook for another 4 minutes until golden brown. Serve warm with syrup or toppings of your choice.
