- 1 yellow bell pepper, diced
- 1 small red onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- Optional: 2 eggs (fried or poached) for topping
Instructions
- Preheat oven to 400?F (200?C). Dice sweet potatoes into uniform cubes.
- In a mixing bowl, toss sweet potatoes with olive oil, cumin, chili powder, paprika, salt, and pepper. Spread on a parchment-lined baking sheet.
- Roast for 25?30 minutes until golden brown and fork-tender, shaking halfway through.
