  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin

  • ? tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Peel and dice sweet potatoes into bite-sized cubes. Chop bell peppers and red onion to similar sizes. Mince garlic.
  2. In a large skillet over medium heat, add olive oil. Saut? sweet potatoes for about 5 minutes until they begin to soften.
  3. Add chopped onions and bell peppers to the skillet; cook until slightly tender.
  4. Push veggies aside; add ground beef on the other side of the skillet. Break apart as it browns for about 5 minutes.
  5. Sprinkle chili powder, cumin, salt, and pepper over meat mixture; stir for another 2 minutes until fragrant.
  6. Add minced garlic during the last minute of cooking time; saut? briefly until aromatic.
  7. Serve hot, garnished with cilantro or avocado if desired.
