  • 1 bell pepper (any color), chopped
  • 1 can (14.5 oz) diced tomatoes with juices
  • 2 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Set the Instant Pot to "Saut?" mode. Add olive oil, chopped onion, and minced garlic; saut? until translucent (about 3 minutes).
  2. Add sliced carrots and bell peppers; cook for another 2 minutes until slightly softened.
  3. Stir in cumin, coriander, cinnamon, paprika, salt, and pepper; cook for an additional minute to toast the spices.
  4. Mix in chickpeas, diced tomatoes (with juices), and vegetable broth; stir well.
  5. Close the lid securely and set to "Manual" mode at high pressure for 8 minutes.
  6. Once cooked, carefully perform a quick release of pressure. Garnish with fresh cilantro before serving over rice or couscous.
