Ingredients
- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon cooking oil
Instructions
- In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and rice vinegar until the sugar dissolves.
- Place chicken breasts in a zip-top bag or shallow dish. Pour half of the marinade over the chicken and refrigerate for at least 30 minutes or overnight.
- Heat oil in a skillet over medium-high heat. Remove chicken from marinade (discard used marinade) and cook for about 6 minutes on each side until cooked through (internal temperature should reach 165?F).
- Add reserved marinade to the skillet and bring to a boil. Simmer for about 2 minutes until slightly thickened.
- Return cooked chicken to the skillet and coat evenly with sauce. Cook for an additional 1-2 minutes until heated through.
- Serve with steamed rice and vegetables.
Notes
For enhanced flavor, marinate the chicken overnight if possible.
Feel free to add your favorite vegetables like bell peppers or broccoli during cooking.
