Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¾ cup granulated sugar (divided)
  • 16 oz Philadelphia cream cheese (softened)
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of an ungreased baking dish.
  3. Bake for 10 minutes until golden brown; set aside to cool.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add remaining sugar, sour cream, vanilla extract, and eggs one at a time until fully combined.
  5. Pour filling over cooled crust and spread evenly.
  6. Bake for an additional 25-30 minutes or until center is set.
  7. Allow to cool at room temperature before refrigerating for at least three hours or overnight.

Notes

For added flavor, consider mixing in fruit purees or chocolate chips into the filling.

Top with fresh berries or whipped cream before serving for an extra layer of delight.
