  • 4 salmon fillets (about 6 oz each)
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus (approximately 1 lb)
  • 2 tbsp olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tsp garlic powder
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a large sheet pan with parchment paper.
  2. Toss halved baby potatoes with 1 tablespoon olive oil, garlic powder, salt, pepper, and half of the dried herbs. Spread them on one side of the sheet pan.
  3. Arrange asparagus on the other side of the pan, drizzle with remaining olive oil, and season with salt and pepper.
  4. Place salmon fillets in the center of the pan. Drizzle with lemon juice and season with salt, pepper, and remaining herbs.
  5. Roast everything in the preheated oven for about 15-20 minutes until salmon flakes easily with a fork and vegetables are tender yet crisp.
